  1. Thank you for sharing about this current issue. Have you experimented with any of the egg replacer products for baking (only recipes that require a whole egg, not just whites). For years I've used flaxseed gel (I grind my own seeds) for 1/3 - 1/2 of the eggs in quick breads and cookies. Due to the recent egg crisis I researched replacers in more detail, and bought a package of Bob's Red Mill Vegan Egg Replacer. So far I haven't seen any problems in texture of those bakes. I use a tiny whisk to combine it because after adding water to pre-mix it turns very stiff. Then I whisk it into the liquid in the recipe so there are no lumps. I've never needed that extra step with flaxseed gel, but reportedly the Bob's and some other brands give a better rise than flaxgel. I haven't done side-by-side tests with Bob's and flaxgel. We're only 2 people and my freezer is currently full of baked goods. I'm a big fan of your site because the recipes are well-researched and always turn out the first time. You have good flavor profiles, and we're of a similar age. I appreciate your approach, and that you're not just re-posting the latest trend I can find anywhere.
