This sweet, crunchy, and irresistible Candied Pistachios recipe is a super easy way to transform plain, everyday nuts into a golden, glossy treat that's fabulous on salads, yogurt, oatmeal, ice cream, or simply as a snack! Plus, the free printable labels make them perfect for gifting.

I've had a little container of these Candied Pistachios on my counter for the past few weeks. It's had to be replenished numerous times as we've been enjoying them as snacks, on salads, and with our morning oatmeal and yogurt… in so many ways! But this recipe is so simple that it's no big deal to whip up a fresh batch whenever the supply runs low.

Every time I serve these delightful pistachios on a salad, my guests' eyes light up, and they ask, "What is this delicious crunchy topping?" They're always impressed when I tell them it's "Candied Pistachios." Sometimes, I just let them be amazed and don't share how ridiculously easy they are to make!

After seeing how quickly and easily this recipe comes together, I knew it had to be added to our Ridiculously Easy Recipe hall of fame.

How to make these Candied Pistachios

If you've made our Ridiculously Easy Maple Molasses Pecans, this pistachio recipe follows the same simple technique.

Here's the start-to-finish scoop:

Ingredients

The ingredient list is short and sweet! You'll need:

  • Pistachios
  • Maple syrup
  • Honey
  • Cinnamon
  • A pinch of chili powder
  • Salt

That's it!

Prep

  • Preheat the oven to 325˚F.
  • Line a sheet pan with foil for easy cleanup.

Combine the Ingredients

  1. In a microwave-safe medium bowl, combine the pistachios, maple syrup, honey, cinnamon, chili powder, and salt.
  2. Microwave on high for 1 minute. This helps the ingredients blend together and thins the mixture so it coats the pistachios evenly.
  3. Stir well, then turn the mixture out onto the prepared sheet pan.

Bake

  • Bake at 325˚F for 18 minutes, stirring once halfway through.

Important

  • Try to let the nuts cool before devouring them!

Café Tips for Making These Candied Pistachios

✔ What's a microwave-safe bowl?
A microwave-safe bowl simply means that it won't get hot or melt in the microwave. Glass, most ceramic dishes, and heatproof glassware are generally safe.

✔ The best bowl to use?
4 or 8 cup Pyrex measuring cup  with a handle works great-the handle stays cool, making it easier to stir.

✔ Pick the prettiest pistachios!
I love using Fiddyment Farms Pistachos because they're consistently fresh and beautiful.

✔ Raw vs. toasted pistachios?
You can use either! Raw pistachios yield a final product with a brighter green color, which I think is really pretty.

✔ How to store them?
Keep them in an airtight container or ziplock bag, and they'll stay fresh for 1-2 weeks.

✔ Be careful when stirring!
The glaze gets very hot, so stir cautiously.

✔ Don't skip lining your pan with foil!
Also, grease the foil-otherwise, the nuts will stick and create a mess.

✔ My favorite sheet pans.
If you're in the market for new sheet pans, I love these OXO Good Grips pans. I've used mine for years and they hold up really well. They come in a half sheet pan size, a jelly roll pan and a quarter sheet pan.

✔ Work quickly in the final step.
When transferring the glazed nuts to the foil, spread them out in a single layer to prevent clumping.

Ridiculously Easy Candied Pistachios

Ingredients
 
 

  • 2 tablespoons honey
  • 2 tablespoons pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon ground cinnamon
  • teaspoon chili powder, optional
  • ½ teaspoon kosher salt
  • 2 cups raw or roasted pistachos

Instructions
 

For the prep:

  1. Preheat oven to 325˚F.
  2. Line a sheet pan with foil and spray the foil generously with nonstick cooking spray. (this will keep nuts from sticking to the pan). Layout a second piece of foil on a work surface and again spray with nonstick cooking spray. Rub each with a small piece of paper toweling to evenly coat the surface with the oil. Or use a piece of parchment paper instead of foil on your work surface. No need to spray the parchment.

For the pistachos:

  1. Combine all ingredients in a medium microwave-safe bowl. Stir well.
  2. Place the bowl in the microwave and cook on high power for 1 minute. This will thin out the maple mixture to help coat the pistachios better. Then stir continuously for 1 minute (no cheating, you want the syrup mixture to get in every little nook and cranny of the pistachios), until the nuts are thoroughly coated.
  3. Turn the pistachios out onto the prepared sheet pan, making sure to scrape out all of the honey mixture. Spread out the nuts to a single layer on the pan.
  4. Place the pan in the preheated oven and bake for 10 minutes.
  5. Remove from oven and stir well to redistribute nuts then spread out again to a single layer. Bake until golden brown, about 8-12 minutes more. Watch them carefully towards the end as nuts can quickly burn.
  6. Stir again after removing from oven then spread out to a single layer on the prepared foil or parchment paper on your work surface.

For storing:

  1. Allow to cool completely, then transfer to an airtight container for storage
