These little individual size quiches are easy, healthy and super delicious!
If you look around my kitchen, the name you might decide to call me is "KitchenAid girl". Yup, that would be me. My love affair with all things KitchenAid, started over 30 years ago when Scott gave me my first stand mixer for Christmas. It was a beauty, and I stayed up most of the night mixing up everything I could get my hands on! It was an incredible little workhorse for many years, till I graduated to a larger, professional model (KitchenAid of course!).
When I chose appliances for my current kitchen, KitchenAid won out, because of their efficiency, reliability and low rate of repair. It's a number of years now and I've been super happy with my KitchenAid refrigerator, dishwasher, food processor, blender and of course, my stand mixer.

I recently added a new member to my collection of KitchenAid appliances; this fun little toaster oven. It's KitchenAid's new Convection Digital Countertop Oven and it's an amazing little dream machine, super well thought out and as pretty as a picture, don't you agree?

I used it to make make these easy, healthy, Crustless Mini-Quiches with Butternut Squash, Bacon and Goat Cheese. I chose the KitchenAid convection bake option and was really pleased at how evenly they baked; not to mention the beautiful, golden brown color.

Crustless Mini-Quiches with Butternut Squash, Bacon and Goat Cheese
Ingredients
- 2 cups diced butternut squash
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ cup Greek yogurt
- 6 large eggs
- ½ teaspoon kosher salt
- 4 strips bacon, diced into ½-inch pieces and cooked until crisp
- 3 medium fresh sage leaves, finely minced
- 1 ½ cups arugula, (more for garnish, if desired)
- 2 ounces goat cheese, (more for garnish, if desired)

No room for a counter-top anything, but I love my kitchen aid mixer. Kitchenaid and Le Crueset will make anyone a better cook (in my opinion).

Your little quiches look great. I've got a convection feature on the double ovens in our new kitchen and this sounds like a good way to try the oven out.

Lovely individual serving quiches, Chris! I LOVE goat cheese, so I know I will love these! I have always had a toaster oven instead of a toaster because toaster ovens are so versatile. A toaster just toasts! Mine isn't convection though (nor is it adorably blue). One of my wall ovens is convection though, and I have never been able to figure out a good use for that setting. Other than cooking faster, do you find an advantage to convection cooking?
Yes, I do Wendy. Because the fan at the back of the oven moves the air around, it creates a more consistent temperature throughout the oven. Whatever I put in comes out much more evenly cooked. That's a real bonus when I'm baking things. I never realized how good convection was until Scott and I moved over to the house we live in now, 11 years ago. We upgraded the kitchen and the new oven was convection. From there on, I was sold!
I love the flavors in this! And so pretty. I also love Kitchen Aid. I inherited my grandma's mixer over 35 years ago and I'm not sure how long she had it before that. All I can say is that that mixer is still rockin'! Reminds me of my grandmother whenever I use it!
They are built solid, Abbe, there's no question about it. I'm reminded of that everytime I have to lift it or move it around the kitchen!

I'm not a goat cheese gal but I could certainly find other terrific cheese replacements to make this lovely quiche, Chris, because the butternut squash and bacon sound wonderful together! What a cute little oven! I love KitchenAid too!

Thanks Tammy! It's funny how, even in a family, different people are all over the place when it comes to cooking style! Our son is a "Clean as you go" cook and Scott, (if he needed to cook) would probably fit into that category too! He also calls me a "whirling dervish" in the kitchen - he says watching me is like watching a dancer - I'm all over the place!

I cook the same way! Not a flat surface that doesn't have something sitting on it, just in case I need to re-do something. John tells people that when I cook I use every utensil in the kitchen. He might be right but I deny it every time.
I have a KitchenAid fridge and stand mixer but I don't have one of these nifty ovens to bake a gorgeous crustless quiche like this! Beauties, every one.

Barb, thanks for your comment and a good question. Use the same instructions as in the recipe. Just watch them at the end, in case your oven is a little different than the KitchenAid. That's true about all oven times and temps, they seem to vary from manufacturer to manufacturer.
Chris..my kitchen..is always tidy..I like my faucet smack in the middle..my counters and sink sparkling..the stove top....everything..
But in the midst of baking..a tempest.
What a mess..trust me.
I do sparkle it up again after..but....just like you..it's a whirlwind.

Toaster ovens have come a long way from the early days! I love how this KitchenAid unit cleans up too. There's a really slick crumb tray that pulls right out and can be wiped clean in a jiffy, because of it's smooth, seamless shape. The controls are digital and very easy to understand. They really thought of everything!
Chris - I gotta admit, I've never ever made quiche - partly it is because of the crust, I have a hard time tidying up after myself too and if I fooled with the crust my kitchen would look like a war zone! So these crustless ones are perfect! I love your use of Greek yogurt and squash in them - Pinning this so I can make it soon!
