This beautiful Fresh Strawberry Butter adds a unique, delicious twist to any meal. It looks and tastes quite fancy but you can make it in minutes!

One day last week  Scott and I were headed home from shopping when I spied a Fresh Strawberries Ahead sign. I quickly pointed out my discovery and a few minutes later we pulled up to a roadside stand brimming with buckets of crimson berries. Even before we returned home, my mind started rolling with an idea for this Fresh Strawberry Butter.

An ever-evolving collection

Although we have a plethora of strawberry recipes in The Café archives, including cakes, jams, salads, muffins, scones, galettes and more, I am happy to add this Ridiculously Easy Fresh Strawberry Butter to the collection. It's unique, fun and super delicious!

Inspiration from the past

The inspiration for this recipe was a sweet memory from years ago. My sister lived in a suburb north of Chicago. Sometimes when I visited, we would take the train into the big city, shop (mostly window shop) the delightful stores on Michigan Avenue then splurge on a delicious lunch at the fancy Nieman Marcus department store.

There were, of course, lots of great places for lunch in downtown Chicago. But we could never resist Nieman Marcus because of the complimentary warm popovers and Strawbery Butter they serve as you wait for your meal. Oh my, it was always so delicious!

From what I can discern from online research, the Nieman Marcus strawberry butter is made with strawberry jam and butter. I decided to go with fresh strawberries, softened butter and a drizzle of honey. I might just like it better than the Nieman Marcus version!

Ridiculously Easy

This Strawberry Butter recipe is so easy it's almost embarrassing to call it "a recipe". But it's also a unique, fun, delicious condiment that will be sure to impress family and friends. That's why we had to include it in our Ridiculously Easy recipe category.

Imagine bringing a basket of warm dinner rolls (we have a bunch of ridiculously easy ones!) to the table and a pretty little bowl filled with Strawberry Butter... talk about being a "kitchen rock star"!

What to do with this Fresh Strawberry Butter

Besides enjoying this Fresh Strawberry Butter on dinner rolls there are lots of other things to do with it:

  • We love it spread on focaccia bread as pictured in this post. SO good!

  • Serve it with pancakes or waffles.
  • Spread it on scones or biscuits (also Ridiculously Easy recipes!).
  • Make popovers and pretend you're at Nieman Marcus.
  • Serve it with slices of toasted pound cake.
  • Make French Toast with thick slices of brioche bread and serve it with a pretty bowl of this Strawberry Butter.
  • Mix it with cream cheese and use it as a spread for bagels.
  • Serve with these Buttermilk Bran Muffins.
  • Freeze it in small jars to enjoy when fresh strawberry season is but a distant memory.
  • Give it away! Yes, who wouldn't love a little jar of this delicious, unique condiment? It makes a wonderful hostess gift. Add a loaf of homemade bread or some dinner rolls for a friend, neighbor, co-worker, favorite teacher... anyone you'd like to share a little delicious love with!

Cafe Tips for Making This Fresh Strawberry Butter

  • This recipe calls for very soft butter. You should be able to lightly push down on it with your finger and be able to go all the way through the stick or block. To soften butter, you can leave it out for several hours or use the microwave on 10% power for 1-2 minutes, depending on the strength of your microwave. Start with 1 minute then proceed in 10-15 second increments until the butter is nice and soft.
  • I like to use butter that has a pale yellow hue (like Land of Lakes) for this recipe vs. a deep yellow-hued butter (like Kerigold). Although I love Kerigold butter, the deep yellow color gives the finished strawberry butter an orangish cast rather than pink.
  • The same thing is true of the honey in this recipe. I like to use a light-hued honey to keep the color really pretty.
  • I use salted butter for this Strawberry Butter recipe. If you only have unsalted, add a half teaspoon of salt.
  • This recipe calls for a food processor. I love my Cuisinart food processor. If you don't have a food processor, you can use a hand mixer for this recipe. If you have neither, no worries! Just chop the strawberries very fine then use a whisk to whip the butter, berries and honey together.
  • I use 3 tablespoons of honey for this recipe. Add more or less to your taste.
  • As mentioned above, this Fresh Strawberry Butter can be refrigerated for a week or stored in the freezer to enjoy several months from now!
  • You can add an optional drop or two of pink or red food coloring if you prefer a more intense color.

Ridiculously Easy Fresh Strawberry Butter

Ingredients
 
 

  • 1 cup very soft butter, I use salted
  • 6-8 medium size strawberries, stemmed and coarsely chopped
  • 3 tablespoons light-colored honey

Instructions
 

To use a food processor:

  1. Place the butter in the bowl of a food processor and process for 30 seconds until nice and creamy.
  2. Add the chopped strawberries and honey and pulse on and off until the strawberries are finely chopped and the butter is smooth.
  3. Transfer to a pretty bowl or small jars and serve at room temperature.
  4. Store in the refrigerator or freezer. Bring back to room temperature before serving.

To use a hand mixer:

  1. Finely chop the strawberries then crush with a fork. Set aside.
  2. Place the butter in a medium-size bowl and mix until smooth and fluffy.
  3. Add the crushed strawberries and the honey and mix until well combined.
  4. Transfer to a pretty bowl or small jars and serve at room temperature.
  5. Store in the refrigerator or freezer. Bring back to room temperature before serving.

To make by hand:

  1. Finely chop the strawberries then crush with a fork. Set aside.
  2. Place the butter in a medium-size bowl and mix with a whisk until smooth and fluffy.

  4. Transfer to a pretty bowl or small jars and serve at room temperature.
